New England Clam Chowder

(The March 2011 Soup Saturday)

Ingredients:

  • 2 oz Bacon, finely diced
  • 1 cup Yellow Onion, diced small
  • 1 cup celery
  • 3 cups Baking Potatoes, diced small (like russets or red bliss potatoes)
  • 1 cup Milk
  • 1 cup of Cream
  • 2 (6.5 ounce) can Clams, drained, juice reserved
  • Kosher Salt & Freshly Ground Pepper
  • Chopped Fresh Parsley, for garnish
