New England Clam Chowder
(The March 2011 Soup Saturday)
Ingredients:
- 2 oz Bacon, finely diced
- 1 cup Yellow Onion, diced small
- 1 cup celery
- 3 cups Baking Potatoes, diced small (like russets or red bliss potatoes)
- 1 cup Milk
- 1 cup of Cream
- 2 (6.5 ounce) can Clams, drained, juice reserved
- Kosher Salt & Freshly Ground Pepper
- Chopped Fresh Parsley, for garnish
